Back and lay in plain words
Back means you bet that something will happen: this team wins the match, this side wins the toss. If it happens, you win according to the odds you took. If it doesn't, you lose your stake. That's all a back bet is.
Lay means you bet that something will not happen. You are playing the part a bookmaker usually plays: you accept another player's back bet. If the outcome doesn't happen, you keep their stake as your win. If it does happen, you pay out their winnings.
